I picked all the runner beans the other weekend, cut them up and put them in the freezer until I was ready to do something with them. I shall be making some of this at the weekend. Can't remember where I got the recipe from, I just have it saved on my computer.


Ingredients
2lb of runner beans
3 large onions
675g of sugar (I use soft brown sugar)
1 tablespoon of turmeric
1 tablespoon mustard seeds
2 teaspoon fenugreek seeds
1 teaspoon salt
1 ½ - 2 tablespoons of cornflour
900ml of cider vinegar

Method
Slice the beans (de-string if needed), chop the onions. Place all the ingredients, except for cornflour, into a large saucepan and bring to the boil. Simmer until the onions and beans are cooked. Mix cornflour with a little cold water and add to pickle mixture, simmer for another 5-10 minutes until thickened. Pour into warmed sterilised jars.

I like to add a bit of chilli and have also made it with sultanas added. Good thing about chutneys is you can spice it up as much or as little as you like.
