Irish flap jacks
Anyone have an easy recipe? The kids like them and have oatmeal needing using up

Aha!! I've just remember I already posted these recipes - they're on page 2 of the recipes (April last year I think)

I do flapjacks more or less by eye, rather than measure, but a general guide would be:
100g butter
250 caster sugar
2 eggs, ligjtly beaten
100g plain flour
1/2 tsp salt
1/2 tsp baking powder
350g oats
2 very ripe bananas
300g mixed dried fruit - raisons, apricots, cherries, dates, apples, whatever you have to hand.
combine, fruit last and bake at 180C for 15 mins or so
These are chewy-moist not crunchy.
