default Luncheon meat/Spam/Chopped Ham & pork

As things begin to get expensive, lets find some recipies for the above, which I find to be tasty although filled with some bad things they can make a cheap & easy meal.

Luncheon meat Rissotto.

I use any of the above cut into small cubes.
Make a rissotto with rice & mixed veg & whatever seasoning you like
mix in the meat & heat through.
Make it creamy with some cream, soft cheese or beaten egg.

Can also be eaten cold.

I understand that in Hawaii they eat a lot of Spam - why not try a dish called Island rice ? It seems to be mainly rice with Spam and pineapple mixed in. Hate Spam but it seems like it might work.
Does anyone cook the more unusual food items, like tongue or tripe ?

Maybe we could widen it to include corned beef? This is made from brisket rather than mechanically recovered meat. Canned meat was popular during the war when it was available on a points system to augment rations. I use a wartime recipe for corned beef casserole, which my mother used to make, and her mother before her. My daughter has taken the recipe back to Uni with her.

I've separated this into two threads, one for any ideas for using tinned meat, and one ('Chicken toenails and yak kneecaps') about the ethics of tinned meat, mechanically recovered meat, and how much of an animal we should be using.

Thanks for the split, I was going to try a corned beef thread on its own Dandelion.

To me luncheeon meat was a Sunday/picnic thing. Look at my age & you will see what I mean.

So any more recipes please?

This topic is now locked. We're all very different on this forum but we're all friends - this discussion has been heated and is in danger of becoming personal.
