Alright my lovers

Despite our seriously healthy diet, the longsufferingspouse has been diagnosed with high cholesterol and after his visit to a dietitian today we have decided to accept her advice and add oily fish to our menu.

After 27 years of being a veggie, I have absolutely no idea how to cook fish and need ideas and suggestions for lot fat recipes and cooking methods...

help!

Salmon risotto - This way you can have as much or little fish as you like because you add it right at the end. You could use salmon steaks instead of fillets but it's a bit more fiddly as you have to remove the bones to serve.

For four people:
2 - 3 tablespoons olive oil
1 large onion, chopped
a clove of garlic crushed or chopped
2 pints stock (fish or vegetable)
9oz (250gr) arborio rice
a piece of salmon fillet weighing about 11oz (300gr)
salt and freshly ground black pepper
shavings of parmesan

In a large frying pan heat the oil and fry the onion until soft (not brown). Preheat the grill. Add the rice and garlic to the onion and stir around. Stir a third of the stock into the rice and stir, then leave to simmer gently stirring occasionally until the liquid is absorbed. Meanwhile, cook the salmon under the grill for 12 - 15 minutes turning once. (When it is cooked the fish will come away from the bones easily, or will 'flake' - if it needs a few more minutes it will be wetter and will not flake apart.) While the fish is grilling continue to cook the risotto by adding half of the remaining stock, and simmering until is it absorbed. At this point you can adda good handful of fresh peas to the risotto (or thawed frozen ones), or a couple of handfuls of baby spinach. Add the rest of the stock and cook until the liquid is absorbed. The rice should be creamy (if it's still a bit resistant add a drop of boiling water and cook for a minute or two more)
Serve the risotto seasoned with salt and pepper and with shavings of parmesan on top, and with the fish either in flakes or pieces on the top

Trout - poach lightly with a squeeze of lemon a splash of olive oil and some ground fennel seeds rubbed in.

Mackerel or sardines - smear with olive and garlic tapenade and grill or BBQ - sardines you can eat bones and all.

Kipper - grill with a tiny dab of butter,serve with crunchy bread and some fresh tomato

Tuna - get thick slab steaks and marinate in the fridge in a little olive oil and soy sauce with a dash of wasabi and grated ginger, then pat all over with crushed coriander seeds or sesame seeds then pan fry hot for no more than 90 seconds each side - the crust will be nicely seared and the inside still chilled and red... mmmm, serve with couscous or oriental salad

Eels - stew slowly or cut into rings and fry/grill

Carp - coat in breadcrumbs, dot with butter and bake on a rack.

If you only are looking for 1.6g/day of omega-3 there are other ways...linseed, purslane, walnuts...grass fed cows produce higher omega-3 cheese and milk and eggs are high if chickens are fed on grass and insects!

Alas not Zoe, the dietitian was quite clear and I would much rather sacrifice my ethic for my loveys health than vice versa.

Trust me we researched the arse out of this before making the fish option viable..

High cholesterol...

Beware the statins!!!

If you can do it with diet all the better statins changed "Lady S" & we didn't reaslise how much until she stopped them...

Just want to give you and LSS a big as any diet change is a big upheaval

Hope you can sort out a diet you can both enjoy (not fried eggs though! )

maybe would be more suitable?

OH its not a weight loss diet, we have a disgustingly healthy menu, its just horrid to make that decison after 27 years, I'm no longer a veggie

didn't mean "diet" as in losing weight, more as a change in eating habits...

must be really hard after so long being veggie....I can't do more than sympathise, as I have always eaten anything...as long as it had a good and happy life and as quick and clean a death as possible...

am sorry about LSS's cholesterol issues and am sure, after all your research, you have decided to do what is right for him..

Its a horrid decision, but there are things we need in his (our) diet that we can only get from oily fish and in the balance sheet, principles have to come second to health.

After losing my dad last year at 65 to heart disease, I have been even more uptight about what we eat, so have had it in the back of my mind that we may need to add fish to our diet, just a vast difference between thinking about it and actually buying and handling dead flesh...

OK how much of the change needed can be met by what I did for several years. One medium tin of tuna (in sunflower oil, rod caught, not cheapest) added to lightly soften onion in olive oil and a tin (or fresh or bottled or frozen) tomatoes + basil or other herbs, served on pasta. Once a week.

Badger, do you have a good fish market where you can get fresh stuff? If so then get them to fillet/skin/de-bone etc at first so you have minimum handling and then maybe start slowly and learn to do it yourself. That's what I did and now I'm slowly doing the same again with some meat (free range/organic chicken on occasions, but that's a different story)

I am under considerable pressure to go for a cholesterol test. I am somewhat reluctant though.
I fear my diet of bacon, foie gras, duck fat and cheese may not mesh with a dietician's view of what is acceptable and after many years of epicurious gluttony dread having to curb my palate.

We're very lucky JB, living in the Maritimes means an abundance of fresh local fish, so I am now on the look out for Atlantic salmon, rainbow and lake trout and kippers....

You will probably be fine Billy, we already have an uptight and stupidly heart healthy diet, the only fats we eat are olive oil, nuts and hard cheeses, yet LSS has the highest cholesterol the doc has seen. All down to the body producing it it seems.

As far as I have been told & walnuts help as well. Hard cheese is not too good, in fact dairy is not brilliant. Any animal fat is not good at all. Like Spar says beware of statins as well, often prescribed, but CAN cause some really nasty side effects.

Seeing as this thread is really about cholesterol, Badger you may not have noticed this article on the BBC

Brain regulates cholesterol in blood, study suggests....

It seems if you are hungry the brain tells the body to store cholesterol in the blood....
